Morning Delight Carrot Cake Overnight Oats

The delicious flavor of carrot cake in an easy-to-make breakfast that is also healthy and filling.

Ingredients
  

Dry

  • 1/2 cup rolled or steel cut oats
  • 1/4 cup carrot
  • 1 Tbsp. raisins
  • 1/2 Tbsp. ground flax or chia seeds
  • 1/3 tsp cinnamon
  • Pinch of clove
  • Pinch of nutmeg
  • Pinch of salt
  • Handful of walnuts or pecans chopped

Wet

  • 2 cups nut milk
  • 2 tsp maple syrup or more to taste
  • 1 tsp vanilla extract

Instructions
 

  • Mix all of the dry ingredients together in a bowl.
    1/2 cup rolled or steel cut oats, 1/4 cup carrot, 1 Tbsp. raisins, 1/2 Tbsp. ground flax or chia seeds, 1/3 tsp cinnamon, Pinch of clove, Pinch of nutmeg, Pinch of salt, Handful of walnuts or pecans
  • Add wet ingredients and mix again.
    2 cups nut milk, 2 tsp maple syrup, 1 tsp vanilla extract
  • Cover tightly and place in the refrigerator for at least 4 hours or ideally overnight.
