Creamy Cashew Mac and Cheese

There are few things more comforting than the taste of pasta mixed with the flavor of cheese. This cashew mac and cheese combines the creamy texture of soaked cashews with the cheesy taste of nutritional yeast in a highly flavorful plant-based alternative to a comfort food classic.

What Is Nutritional Yeast?

Nutritional yeast comes from the Saccharomyces Cerevisiae species of yeast and is sometimes called brewer’s or baker’s yeast. However, nutritional yeast is not the same as brewer’s yeast and is deactivated, unlike baker’s yeast. It has a savory and cheesy flavor and makes a great addition to many dishes.

Nutritional yeast is a complete protein which means it contains all nine essential amino acids. And it is an excellent source of B vitamins. Nutritional yeast also contains powerful antioxidants that can help protect the body from chronic illnesses, such as heart disease.

Creamy Cashew Mac & Cheese

A tasty mac & cheese alternative made with cashews and nutritional yeast.

Ingredients
  

  • 12 ounces whole-grain macaroni elbows
  • 1/4 cup cashews soaked in hot water for 10 minutes
  • 1/3 cup nutritional yeast
  • 1 Tbsp. corn starch
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp ground yellow mustard seed
  • 1/4 tsp turmeric
  • 1/4 tsp paprika
  • 2/3 cup plant-based milk
  • 1 Tbsp. rice vinegar or white wine vinegar
  • 1 Tbsp. plant-based butter melted

Instructions
 

  • Bring a large pot of water to a boil, add macaroni, and cook according to package instructions.
  • In the meantime, heat a cup of water to boiling, add the cashews and let rest for 10 minutes.
  • Drain the cashews and add them to the blender along with the rest of the ingredients. Blend until smooth.
    1/3 cup nutritional yeast, 1 Tbsp. corn starch, 1 tsp salt, 1/2 tsp onion powder, 1/2 tsp ground yellow mustard seed, 1/4 tsp turmeric, 1/4 tsp paprika, 2/3 cup plant-based milk, 1 Tbsp. rice vinegar or white wine vinegar, 1 Tbsp. plant-based butter
  • Add the mixture to a saucepan and heat on medium-low for 3-5 minutes while whisking constantly.
  • Drain the macaroni and add the sauce. Serve hot.
